Abstract
This reference manual was developed by the Arizona Department of Corrections to provide assistance to State and local correctional facilities in planning and administering the Medical and Religious Restricted Diet Program. The manual is intended for use by medical, dietary, contract food service, and correctional personnel to ensure the proper implementation of the restricted diet program. The manual contains a list of restricted diets used for medical reasons and a list of restricted diets used for religious reasons. Guidelines are presented on the three levels for implementing medical restricted diets, all regular restricted diets, how to order and cancel restricted diets, and procedures for ensuring that restricted diets are prepared and served according to the approved diet manual. Guidelines are also included on how to conduct dietary consultations. Guidelines for specific medical and religious restricted diets are included in the manual. Appendix
