THE DIET MANUAL, ONE OF A SERIES OF TECHNICAL ASSISTANCE MANUALS PUBLISHED BY THE MICHIGAN CORRECTIONS DEPARTMENT AND FUNDED BY LEAA, IS A GUIDE FOR THE PLANNING AND INTERPRETATION OF THERAPEUTIC DIETS IN INSTITUTIONS.
Abstract
GUIDELINES FOR THE ORDERING OF THERAPEUTIC DIETS IN CORRECTIONAL INSTITUTIONS ARE OFFERED, INCLUDING PROCEDURES FOR ORDERING AND RECOMMENDATIONS FOR NUTRITION COUNSELING. INFORMATION FOR DIETS IN 10 DIFFERENT CATEGORIES IS GIVEN, INCLUDING DIETS THAT ARE MODIFIED FOR CONSISTENCY, FOR GASTROINTESTINAL DISEASE, FOR FOOD INTOLERANCES, AND FOR MODIFICATIONS OF CARBOHYDRATES AND CALORIES. OTHER DIETS ARE MODIFIED FOR FATS, PROTEINS, SODIUM, PARENTERAL NUTRITION, AND TEST PURPOSES. EACH DIET SECTION CONTAINS A STATEMENT OF PURPOSE, SUGGESTIONS FOR INDICATED USES, A DIET DESCRIPTION, A STATEMENT OF NUTRITIONAL ADEQUACY, THE ORDERING PROCEDURE, A LIST OF FOODS ALLOWED AND NOT ALLOWED, AND A SAMPLE MEAL PLAN. THE MANUAL ALSO INCLUDES THE GENERAL DIET, TEST MEALS, AND VARIOUS LISTS AND TABLES MOST FREQUENTLY NEEDED BY HEALTH CARE AND FOOD SERVICE PERSONNEL. APPENDIXES INCLUDE RECOMMENDED DIETARY ALLOWANCES, HEIGHTS AND WEIGHT TABLES, CHIEF SOURCES OF VITAMINS AND MINERALS, FOODS HIGH IN POTASSIUM, SODIUM CONTENT OF COMMON FOODS, COMMON GAS PRODUCING FOODS, AND METRIC REFERENCES CONVERSION TABLES. EIGHT REFERENCES ARE INCLUDED.
